• Soup on Sunday: Mustard Soup – Revised

    Last February, during my layover in Amsterdam I had cream of mustard soup (or Zaanse Mosterdsoep) for the first time. It was delicious! Certainly it was new to me, but I was told that mustard soup has a long tradition in Holland. I immediately began searching for a recipe to recreate at home and found this delicious version. Most recently, my husband I took a weekend trip to Amsterdam to celebrate 23 years.  On my dining agenda was a bowl of Mustard Soup. I was disappointed to learned that mustard soup is not so easy to find. Luckily, we found a fantastic mustard soup at Luden. I’ve gone back to the original version that I posted last year and added sour cream – it’s divine!

    3 tablespoons olive oil
    3 carrots, peeled and diced
    1 onion, diced
    1 leek, thinly sliced
    1/2 small celery root, diced
    1/2 small fennel, sliced
    2 tablespoons flour
    1/2 bottle dry white wine
    6 cups vegetable stock
    1/2 cup sour cream
    4 tablespoons Dijon mustard
    2 tablespoons coarse, ground mustard*
    fresh rosemary sprig
    fresh thyme sprig
    sea salt
    fresh ground pepper
    Chives for garnish (optional)

    Heat olive oil in a large stock pot. Add all vegetables and sauté until soft, stirring occasionally to prevent sticking and allowing to cook evenly. Add the flour and mix well. Pour in the wine and stir it for a few minutes. Add the vegetable stock and bring to a low boil.

    Add the thyme, rosemary  and reduce to a simmer for about 30 minutes. Add the Dijon, ground mustard and sour cream, simmering an additional 15-20 minutes. Remove rosemary and thyme and puree soup in batches. Push the pureed soup through a fine sieve to create a very smooth soup. Rewarm soup if needed. Tops with chives. Serve hot with crusty bread.

    *This is traditionally made with mustard from the Zaan. Any mustard with whole mustard seeds will work well too.

      I spent 4 months in Amsterdam studying and never got a chance to try mustard soup. I will have to try your recipe :)
